    Some of the people in this video are eating the oysters improperly, IMO. There is no reason for the diner to make contact with the outside/exterior shell in any way. The whole idea is that they are a fresh food, sanitary in its sealed interior. All precautions are taken to shuck and eat immediately for that reason. To allow the mucus membranes of your mouth, lick the shell or lip the underside, is disgusting and increases the chances or an errant bacteria. The guy in the restaurant has it right with the little fork to lift the meat enough so you can start the suck. Less elegantly I believe you are supposed to put the lips to the flesh and suck/slurp the entirety into the mouth.
